Brandon founded Keeping It Sharp after more than a decade working in professional kitchens and butcher shops in Colorado and Orange County, environments where a dull knife isn't just inefficient, it's unacceptable.

That experience means he understands the difference between a Japanese gyuto that needs a 15° water-stone finish and a German cleaver that can handle a slightly more aggressive geometry. He sharpens to the knife's spec, no guessing involved.

  • Absolutely and this is one of the most popular ways people book in neighborhoods like Newport Beach and North Tustin.

    Each household receives 10% off. Last-minute additions are welcome; just give me a heads up.

  • Each knife averages 4–5 minutes depending on its condition. A household with 8–10 knives is typically complete in under an hour. You're free to go about your day and I will return them to you as they're finished.

  • Not necessarily. Many clients leave their knives in a designated spot and we return them when finished.

    If you'd prefer to be present, you're always welcome and I am happy to talk through your knives and their care.

  • There is a lot of factors that determine this. Most manufacturers recommend getting your knives professionally sharpened at least 1x per year.

    For homes that spend a lot of time in the kitchen, I recommend every 4-6 months.

  • I use two methods to sharpen. 

    • Traditional hand sharpening on whetstones

    • Wheeled Whetstone

    Sharpening via the wheeled whetstone allows me to sharpen your knives at their exact angle while still removing minimal amount of steel. 

    Traditional whetstone is by request only, refer to the Signature Blade Renewal pricing. I used multiple whetstones to bring the edge back to life and finish on a leather strop.

    Both methods are waterstone based to ensure your knife will not overheat in the sharpening process. Maintaining the integrity of the edge.

  • We ask for a minimum of 5 knives per appointment to ensure the visit is worth your time and ours.

    If you have fewer knives, call Brandon and when I am scheduled nearby, we can often work something out at no extra hassle.

    If you have less than 5 knives and would still like to schedule, it is a $60.00 minimum charge.
