The six-item minimum is for the drive, not for you. Every Saturday morning I’m set up at the Newport Harbor Certified Farmers’ Market on Dover Drive — no minimum, no travel fee. Hand me your chef’s knife on the way to the tomatoes and pick it up sharp on the way out.

It’s also the easiest way to see the work before you book a visit. Bring one knife, watch what comes back, decide from there.

I arrive and collect your knives. Hand them to me or leave them on the porch — clean, please.

SECOND

Inspection

We look them over together. I’ll tell you which ones need extra work and answer anything you want to ask.

THIRD

Sharpening

I work at my truck outside. Go about your afternoon, or come out and watch — people usually do.

LAST

Cleaned and returned

Back to you cleaned, dried and oiled. Frequent home cooks need this every 9–12 months.

Newport Beach kitchens run hard, and so do the private chefs cooking in homes along the water. Ten years on the line and behind a butcher counter means I know you don’t let just anyone touch your knives. Waterstones at each knife’s designed angle, on-site from the truck at the back door between services, same-day return — most commercial visits run one to one and a half hours.

Do you cover all of Newport Beach?

Yes — Balboa Island, the Peninsula, Corona del Mar, Newport Coast, Dover Shores, Lido Isle, Eastbluff, Back Bay and everything between. If you’re on the island or behind a gate, tell me when you book and I’ll sort out parking and access ahead of time.

I only have three knives. Can you still come?

The at-home visit has a 6-item minimum. Easiest fix: bring them to me Saturday at the Newport Harbor Certified Farmers’ Market, 798 Dover Dr, 9am–1pm. No minimum at the booth, no travel fee. Or text me — if I’m already scheduled on your street that week, we’ll usually make it work.

How long does a visit take?

Under an hour for most homes. You get your knives back the same visit — I don’t take them away.

Do I need to be home?

Only long enough to hand me the knives, or leave them clean on the porch and I’ll text you when they’re done and back.

Can I invite neighbors on Balboa Island or in Newport Coast?

Please do — that’s a Gather. You take 20% off your own knives as host, every guest household takes 10% off theirs, and I do it all in one stop. Three or four households is the sweet spot.

Do you sharpen Shun, Miyabi, Global and other Japanese knives?

Yes, and they’re a big part of what I do. Waterstones at the angle the maker intended, finished on a strop.

How often should I do this?

If you cook most nights, every 9–12 months. If your knives already frustrate you, that’s the answer regardless of when you last had them done.
